Pecan orange muffins details
- Ingredients
- 1/2 cup butter or margarine, softened
- 1 cup sugar
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- One 8-ounce container plain yogurt
- 3/4 cup chopped pecans, toasted
- 1 teaspoon grated orange rind
- 1/4 cup orange juice
- 1 Tablespoon sugar
Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well. Add eggs 1 at a time, beating until blended after each addition. Combine flour and baking soda; add to butter mixture alternately with yogurt, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in pecans and orange rind.
Place paper baking cups in muffin pans and lightly coat with cooking spray. Spoon batter into cups, filling until almost full. Bake at 375 degrees for 18 to 20 minutes or until lightly browned. Brush orange juice over hot muffins and sprinkle with sugar.
