Ingredients
4 large | ripe peaches |
2 tbsp | sugar |

For the chantilly cream: | |
200 ml | double cream |
50 g | icing sugar |
1 tsp | vanilla extract |
4 sprig(s) | fresh mint, to serve |
4 | cocktail cherries, to serve OPTIONAL |
flaked almonds to decorate |
Instructions
Place the peaches in a pan just large enough to accommodate them. Add the sugar and add sufficient water to cover to about ¾ of the height of the peaches. Bring to a boil and reduce heat and simmer for about 5 minutes or until the peaches are just tender when tested with a knife. Do not allow to become too soft.Remove the peaches and discard the poaching liquid. Allow the peaches to cool for several minutes. When comfortable to handle, remove the skins and halve. Remove stones and set the peach halves aside.
Whip the cream with about half the sugar and the vanilla and whip until becoming thick. The above amount of sugar should satisfy most tastes. But if you prefer things less or more sweet, check cream for sweetness. Add sugar at the rate of ½ tbsp at a time and whip a little more and re-check for sweetness. Stop adding sugar when considered sufficiently sweet. Whip the cream until stiff.
Place a heaped tablespoonful of cream in the bottom of 4 dessert or ice cream glasses. Add a peach half, preferable inclined at an angle, to each. Top up with about twice as much cream as previously and add the second peach half, also inclined but at a reverse angle to the first. Divide the remaining cream between the servings. If you have one, a piping bag and decorative nozzle can be used to add the topping. Chill for at least 1-1½ hours before serving.
Top with a sprig of mint, a cocktail cherry and a sprinkling of flaked almonds.
Option: If peaches are out of season, use canned, well drained peach halves.
