Ingredients
For the Base: | |
100 g | digestive biscuits, crushed |
60 g | sugar |
2 tbsp | unsalted butter, melted |
For the Filling: | |
2 medium | eggs |
350 g | cream cheese |
225 g | sugar |
½ tsp | vanilla extract |
80 g | peach jam or preserve |
For the topping: | |
325 g | peach jam or preserve |
2 medium | ripe peaches or 1 large, stoned and sliced |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°C.To prepare the base: mix ingredients together in a bowl and press into the base and slightly up the sides of an 8-inch, 20cm springform cake tin. Chill for about 30 minutes.
To prepare the filling: beat together the eggs and cream cheese in a bowl until light and smooth. Add the sugar and vanilla and continue to beat until well blended. Add the peach jam or preserve and mix until incorporated.
Pour the filling into the base and bake for 35-40 minutes until just set.
Remove from oven and allow to cool for 10 minutes.
Top with the peach jam and allow to cool completely Chill overnight. When ready to serve, slice the peach(es) and arrange on top. Serve immediately.
