Peach and champagne soup recipe details
Ingredients
6 | peaches, halved, pitted |
150 g | caster sugar |
200 ml | Champagne |
1 stick(s) | cinnamon |
2 | whole cloves |
1 sprig(s) | fresh mint |
4 tbsp | double cream |
350 ml | water |
fresh raspberries, for garnish, optional |
Instructions
Heat the water over medium heat, add the sugar and stir until the sugar dissolves. Add the peaches, champagne, cinnamon and cloves. Bring to the boil, then lower the heat and simmer for 20 minutes.Remove from the heat and stir in the mint. Set aside to cool.
Remove the cinnamon, cloves and mint and discard. Drain the fruit through a sieve and reserve the syrup.
Place the fruit in a blender and process until well puréed. Add the syrup to the peaches and blend again until you have a nice thin soup.
Add the cream and process again for a few seconds.
Transfer to a bowl, cover and chill for 4 hours.
To serve, garnish with fresh raspberries, if desired.
