Peach and blueberry casserole recipe details
Ingredients
500 g | blueberries |
1 kg | peaches |
150 g | sugar |
100 g | flour |
1 tsp | baking powder |
1 medium | egg |
5 tbsp | butter, melted |
1 tsp | cinnamon |
Instructions
Adjust oven rack to the highest possible position. Preheat oven to 180°C. Grease two large casserole dishes and set aside.Blanche peaches in boiling water, 15 seconds. Place in bowl of ice water, then peel with fingers. Slice into wedges.
Wash and drain berries and set aside.
Place peaches in casserole, cover with berries and sprinkle with 2 tablespoon of sugar.
In mixing bowl, combine flour, sugar, baking powder and salt. Add egg and beat with fork, then process in a blender until smooth.
Sprinkle mixture topping evenly over berries and drizzle melted butter over topping.
Mix the cinnamon with 1 tablespoon of sugar and sprinkle over the top.
Bake uncovered for 15 minutes. Then increase the temperature to 200°C and bake 12-15 minutes more until topping is lightly browned.
