Pastel de chile verde recipe details
- Ingredients
- 8 to 10 whole green chiles (canned works)
- 1/4 pound sharp cheddar cheese, cubed (a lighter white cheese can also be used)
- 7 eggs
- 3 Tablespoons cream or half & half
- 3/4 teaspoon garlic salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/2 cup chopped onions
- **Sliced tomatoes, olives and additional cheeses can all be added for variety
Spray pie plate with non-stick cooking spray. Slit chiles open lengthwise and shape chiles in pie plate to form the crust (pointed ends towards the center). Place all remaining ingredients in bowl and mix together (excluding tomatoes, cheeses, or other additions). Layer tomatoes, olives, etc., pour egg mixture over chiles and bake at 325 degrees for 30 to 35 minutes or until pie is set.
Makes: One 10-inch pie plate serving 6 to 8 people.
