Pasta with tuna tomatoes and mushrooms recipe details
Ingredients
8 tbsp | extra virgin olive oil |
2 clove(s) | garlic |
1 small | dried red chili pepper |
350 g | plum tomatoes, peeled and chopped into small cubes |
2 tbsp | fresh basil, minced |
125 g | canned tuna in olive oil, flaked and chopped |
2 | anchovy fillets, drained and cut into small pieces |
100 g | fresh mushrooms, stemmed and cut into 2 cm cubes |
450 g | dried linguine, fettuccini or other flat paste strands |
salt and fresh ground pepper to taste |
Instructions
In a frying pan over medium heat, warm 3 tbsp of the olive oil. Add the garlic cloves and chilli pepper and sauté, stirring, for a few minutes.Add the tomatoes, basil and salt to taste and cook uncovered. Keep stirring until creamy but not dry, about 15 minutes. Discard the garlic cloves and chilli pepper.
While the tomatoes are cooking, warm 2 tbsp of the olive oil in another frying pan. Add the tuna, anchovies and mushrooms. Raise the heat and cook stirring for a couple of minutes.
Boil the pasta in salted water until al dente. Drain and transfer to a warmed serving platter, toss with the 2 tbsp olive oil. Season with pepper.
Spoon the two sauces in alternating vertical stripes on top the pasta.
