Ingredients

5500 g	pasta
3	shallots, chopped
1	carrots, sliced
1 stalk(s)	leek, sliced
1	kohlrabi, peeled and diced
4 tbsp	oil
100 ml	white wine
125 ml	single cream
5 tbsp	fresh cress
	salt and freshly ground black pepper
60 g	butter

Instructions

Cook the pasta in salted water until al dente.

In a saucepan, heat 1 tablespoon of oil. Sauté the shallots until lucent. Pour in the wine and the cream and simmer for 10 minutes. Stir the cress into the sauce and simmer for 2 more minutes. Pass the sauce through a sieve and keep warm.

In a pan, heat the remaining oil. Fry the vegetables until done, but still a bit firm to the bite. Season with salt and pepper.

Drain the cooked pasta and combine with the butter and the vegetables. Pour over the cress sauce and serve immediately.
