Ingredients

350 g penne
600 g tomatoes, fresh, peeled, seeds removed, cut into cubes
4 tbsp extra virgin olive oil
3 clove(s) garlic, peeled, minced
5 tbsp Pecorino cheese, grated.
1 piece(s) red hot pepper,
4 tbsp parsley, chopped
salt

Instructions

Brown the minced garlic and the red hot pepper in 3 tablespoons of extra virgin olive oil. Add the tomatoes and cook for five minutes.

Cook the penne in plenty of salted water, add 1 tablespoon of extra virgin olive oil. Drain penne when cooked al dente, and pour it in the sauce.

Sprinkle with grated Pecorino cheese and chopped parsley before serving.

Note: Pecorino cheese can be substituted with Parmesan cheese.
