Pasta spinach and cauliflower casserole recipe details
Ingredients
1 head(s) | cauliflower, in florets, cooked |
2 | onions, chopped |
300 g | spinach, frozen, thawed |
250 g | milk |
3 | eggs |
150 g | freshly grated cheese |
400 g | pasta of your choice |
1 tsp | butter |
salt and pepper | |
nutmeg | |
1 tbsp | oil |
1 tbsp | tomato puree |
150 ml | vegetable stock |
1 large can(s) | tomatoes |
1 pinch(es) | sugar |
Instructions
Cook the pasta in salted water until al dente. Preheat the oven to 175°C.In a saucepan,heat the butter and sauté half of the onions until lucent. Add the spinach and cook over low heat for some minutes. Season with salt, pepper and nutmeg.
Mix together the eggs and the milk. Season with salt, pepper and nutmeg.
In a buttered casserole, mix together the cauliflower, spinach and pasta. Pour over the egg mixture. Sprinkle with the grated cheese and bake for 30 minutes.
Heat the oil and sauté the remaining onions together with the tomato purée. Pour in the stock and add the tomatoes. Cook over medium heat for 20 minutes. Season to taste with salt, pepper and sugar.
Serve the casserole with the tomato sauce.
