Pasta in curry sauce with fried chicken and herb oil recipe details
Ingredients
400 g | pasta |
2 sprig(s) | thyme, chopped |
3 sprig(s) | parsley, chopped |
3 | sage leaves, chopped |
50 g | pine nuts, toasted and roughly chopped |
8 tbsp | olive oil |
salt and freshly ground black pepper | |
2 | shallots, chopped |
30 g | fresh ginger, grated |
curry powder, to taste | |
250 ml | single cream |
2 | poulard breast fillets |
Instructions
Combine 5 tablespoons of the oil with pine nuts and the finely chopped herbs. Season to taste with salt and pepper.In a pan, heat 1 tablespoon of oil. Sauté the shallots until soft. Add the ginger and the cream and bring to a boil. Season to taste with curry powder. Cook over medium heat until the sauce has thickened. Season to taste with salt.
Cook the pasta in salted water until al dente.
Season the poulard fillets with salt. In a pan, heat 2 tablespoons of oil. Add the fillets and fry until golden brown all around and just cooked through.
Drain the cooked pasta and add to the sauce. Toss until well coated. Adjust seasoning. Cut the fillets into stripes. Divide the pasta and the sauce onto warmed plates and arrange the poulard stripes on top. Drizzle with the herb oil and serve sprinkled with freshly ground black pepper.
