Pasta in a basil and white wine sauce recipe details
Ingredients
500 g | pasta |
3 | shallots, chopped |
2 tbsp | olive oil |
1 clove(s) | garlic, minced |
2 bunch(es) | basil, chopped |
200 ml | white wine |
200 ml | single cream |
salt and freshly ground black pepper | |
40 g | soft butter |
balsamic vinegar | |
100 g | freshly grated Parmesan cheese |
150 g | macadamia nuts, toasted and chopped |
Instructions
Cook the pasta in salted water until al dente.In a saucepan, heat the oil and sauté the shallots and the garlic until lucent. Pour in the wine and the cream and bring to a boil. Simmer over low heat until thickened. Add the basil and the butter and and purée the sauce with a hand blender. Season to taste with salt, pepper and vinegar.
Drain the cooked pasta and add to the sauce. Toss and serve immediately, sprinkled with the cheese and the nuts.
