Ingredients

For the Filling:
150 g lean lamb meat, chopped
1 tbsp sunflower oil
½ tsp cumin
75 tsp garlic
25 tsp ginger
2  green jalapeño peppers, finely chopped
½ tsp turmeric, ground
½ tsp garam masala
salt
2 tbsp fresh coriander, chopped
For the bread:
450 g wholemeal wheat flour, (Atta flour, available in Indian shops)
2 tbsp sunflower oil, plus extra for baking
salt

Instructions

For the filling:
Heat 1 tbsp. of oil in a saucepan and roast the cumin until slightly brown. Purée the chopped ginger and garlic with a bit of water. Add the mixture together with the jalapeño peppers, meat, turmeric, garam masala and a pinch of salt to the cumin. Sear over high heat for 2-3 minutes, stirring. Reduce the heat, cover and gently simmer for 15 minutes. As soon as the meat is well-cooked, remove the lid and allow liquid to thicken over high heat. Mix in the coriander and set the saucepan aside.

For the bread:
Combine the flour with 2 tbsp. oil and one pinch of salt. Knead the dough with sufficient water to a firm dough and until smooth.

Divide the dough and form 16 equal balls. Lightly flour the surface and roll out each ball to a circle, 8 cm in diameter.

Spoon on each of 8 circles a heaped tbsp. of the lamb mixture and spread almost to the edge. Take the other 8 circles and place them on top. Press the edges firmly together.

To bake:Heat a large pan with a dash of oil. Pan-fry the breads over high heat from both sides. To keep the breads warm, wrap them in kitchen foil while you bake the other ones.

Serve with the remaining filling.
