Ingredients

4 slice(s) white Italian style bread
100 ml extra virgin olive oil
3 tbsp balsamic vinegar
1 clove(s) garlic, crushed
5  ripe tomatoes
1 small red onion
5 leaves fresh basil
salt and pepper to taste

Instructions

Remove the crust from the bread. Cut into even sized cubes and bake until golden and dry. Let cool.

Combine oil, vinegar and garlic in a bowl, add the bread and toss. Let soak until the bread retains a slight crunchy texture.

Roughly chop the tomatoes, thinly slice the onion and add both to the bowl.

Tear basil leaves into small pieces. Season to taste and serve immediately.
