Pansy fruit cup recipe details
- Ingredients
- 4 cups of fresh fruit, cut into bite-size pieces (can use strawberries, cantaloupe, blueberries, kiwi — any fruit, any combination you wish)
- 1 Tablespoon red raspberry syrup
- Small container of plain yogurt
- 4 freshly picked and rinsed pansies (smaller ones look best) or violas
- Fresh, rinsed mint leaves
Put the cut fruit into bowl and drizzle syrup on the fruit. Add about 2 chopped mint leaves and gently toss. Put into 4 pretty bowls (we like to use crystal sherbets). Top with a dollop of yogurt. Gently set pansy on top of the yogurt and tuck mint leaves on each side.
Serves:4Pansies and violas (sometimes called Johnny Jump Ups) are very edible; however, they don’t have much flavor and are mostly for decoration. Let your guests know eating them is OK but optional. About half our guests do, half don’t, but they always enjoy the surprise of finding flowers on their fruit in the morning. It gets the morning conversation off to a lively start. The red raspberry syrup is the secret to the wonderful flavor.
