Panellets catalan all saints cookies recipe details
Ingredients1. Cornstarch (3/4c)
2. white sugar (2 1/2c)
3. egg whites, beaten (2)
4. egg yolks, beaten (2)
5. pine nuts (3/4c)
6. lemon zest (1tbsp)
7. ground almonds (3 1/2c)
8. potatoes, cubed (1/3 pounds)
Method of preparation
1. Take a small saucepan; place the cubes of potatoes in it. Add water to cover the potatoes and then cook them until they become soft. Then mash the potatoes with fork and keep them to cool. Heat the oven to 425 degrees F or 220 degrees C.
2. Take a baking sheet, lightly butter it. Take a bowl; mix the cooled potatoes and almonds in it. Gently add sugar in it and mix it with wooden spoon. Add lemon zest in it and keep on mixing it with your hands. Make 1-inch balls of dough and then roll them in pine nuts.
3. Apply egg yolk on each ball and then make each ball into crescent shape. Now cover the cookies with cornstarch and then apply egg whites on each cookie.
4. Place the cookies on baking sheet. Now place the sheet in oven and bake the cookies at 425 degrees F for about 10 to 12 minutes until they get golden color.
Makes about 24 cookies
