Pancakes with curd cheese filling and barberry sauce recipe details
Ingredients
For the pancakes: | |
200 g | flour |
2 | eggs |
400 ml | milk or more |
salt | |
butter for the pan | |
For the fIlling: | |
500 g | curd cheese |
2 | egg yolks |
1 | lemon, grated rind |
3 tbsp | crème fraîche |
1 tbsp | icing sugar |
butter, to grease the tin | |
125 ml | milk |
For the sauce: | |
1 l | beetroot juice |
150 g | barberries |
1 | cinnamon stick |
1 tbsp | sugar |
Instructions
Mix the flour with eggs, milk and a pinch of salt to a thin batter. Leave to stand for approximately 15 minutes. Bake 12 thin pancakes in a little hot butter.Preheat the oven to 200°C.
Mix the curd cheese with egg yolks, lemon rind , Crème fraîche and icing sugar until well combined. Evenly divide the filling on the pancakes. Roll up the pancakes and place them side by side in a greased casserole dish. Heat the milk and pour in at the side. Bake the pancakes for approximately 20 minutes.
In the meantime, bring the beetroot juice with the barberries, cinnamon stick and sugar to a boil. Cook stirring until the sauce thickens. Remove the cinnamon stick.
To serve, arrange on each plate 2 pancakes and sprinkle with the sauce.
