- 12 to 16 shallots
- 1 can tomato paste
- 1-1/4 cups red wine, divided use
- 2 Tablespoons butter
- 1 Tablespoon sugar

Shallots in Tomato Sauce: Slice 6 to 8 shallots and place in sauce pan. Add 3 Tablespoons olive oil and simmer until clear. Add tomato paste and 3/4 cup of red wine and simmer for 15 minutes. Stir in an additional 1/2 cup red wine and simmer for another 10 minutes.
Whole Shallots: Place 6 to 8 shallots in sauce pan. Add butter and sugar. Simmer for 25 to 30 minutes.
