Oxford pudding recipe details
Ingredients
10 | apricots |
6 medium | eggs |
2 medium | eggs, whites only |
50 ml | double cream |
2 tbsp | sugar |

Instructions
Steam the apricots until tender. Cut into little pieces and place into a bowl. Add sugar to taste. Set aside and leave to cool.When cold, beat in the four whole eggs and cream.
Preheat oven to 200°C. Grease a pie dish and line with puff pastry.
Place the mixture into pie dish and bake for about 30 minutes. Reduce heat for the last 15 minutes.
In a bowl beat together the two egg whites and a little sugar. Pour mixture over the baked apricots and bake for another ten minutes at 200°C.
If desired, serve with ice cream and whipped cream.
