- Ingredients
- 8 Tablespoons butter
- 8 large eggs
- 2 cups milk
- 2 cups flour
- 1/2 teaspoon pure almond extract
- 2 Tablespoons maple syrup
Preheat oven to 475 degrees and gather eight 6-inch ovenproof dishes. In a large bowl, combine all ingredients except butter; mix until very smooth. Put 1 tablespoon butter in each dish and heat in oven. When butter is melted, remove dishes and divide mixture among each (a little more than 1/2 cup per dish). Return dishes to oven and bake for 12 minutes until golden and puffed.
Let dishes sit 2 or 3 minutes after taking out of oven. The centers of popovers will sink. Fill with a mixture of fresh berries. Dust with icing (powdered/confectioners) sugar and serve.
