Ingredients:
1/4 cup butter or margarine
1/4 cup flour
6 eggs
2 cups grated Monterey jack cheese
1 cup cottage cheese-small curd
1/2 cup chopped green chiles
Instructions:

Place butter or margarine in microwave for few seconds to melt. Mix flour into the melted butter. Beat eggs and add to butter and flour mixture – stir well. Add Monterey jack cheese. Add cottage cheese and then add chopped green chiles.

Use a 9″ round baking dish and spray with Pam or coat with shortening. Pour the stirred mixture into the dish and bake at 375 degrees in a conventional oven for 40 minutes or until an inserted knife comes out clean. Suggest serving with slices of cantaloupe and kiwi.
