Ingredients:
2 Tablespoons butter
6 eggs
1 cup all-purpose flour
3 Tablespoons sugar
1/2 teaspoon salt
1 cup milk
1 Tablespoon almond extract
Instructions:

Mom and Dad were raised on Martha’s Vineyard. Emelia and Manuel had four children. Self-employed as an oil and gas distributor on Martha’s Vineyard and in Falmouth, MA, they owned and operated Cranberry Acres Campsites and owned real estate. They also owned the only two cranberry bogs and harvested berries yearly for Ocean Spray in Wareham, MA.— Helen Mary Duarte

Preheat oven to 400 degrees. Place butter in pannekoeken pan; heat in oven for about 2 minutes or until butter melts. Spread melted butter evenly over bottom of the pan; set aside. In a large mixing bowl, beat eggs slightly. Sift in flour, sugar, and salt. Gradually add milk and extract, beating until smooth. Pour into pan.

Bake at 400 degrees for 15 minutes, then reduce heat to 325 degrees and bake for 40 to 45 minutes longer or until deep golden brown. Immediately loosen from the pan and slice onto serving plates. Top with fresh fruit and confectioners’ sugar or warmed syrup.
