A simple, tasty breakfast casserole. Way cheaper and better than the same thing at your local greasy breakfast joint.
Ready in: 55 mins

Ingredients

Serves: 4
  • 1 3/4 pounds red potatoes
  • Olive oil
  • 1 onion, chopped
  • 8 ounces white mushrooms, chopped
  • 12 ounces corned beef, diced (canned ok)
  • 1 1/2 tablespoons Worcestershire sauce

Preparation method

Prep: 10 mins | Cook: 45 mins

1. Bring a large pot of salted water to boil over high heat. Add potatoes and cook for about 20 minutes, or until tender. Drain, cool slightly, then chop coarsely.
2. Preheat oven to 400 degrees F.
3. Coat an oven-safe skillet with oil, then place over medium heat. Cook onion in hot oil for about 10 minutes, then add mushrooms and cook on medium-high heat for 3 more minutes. (Toss in a little salt here if you have it).
4. Add corned beef, potatoes, and Worcestershire. Stir to combine, then bake for 25 minutes.
