Orange glazed blueberry scones recipe details
Ingredients
200 g | flour |
1 tbsp | baking powder |
1 tsp | salt |
60 g | butter, unsalted |
190 ml | whipping cream |
1 medium | egg |
350 g | fresh blueberries |
For the orange glaze: | |
2 tbsp | butter, unsalted |
260 g | powdered sugar |
juice and zest of 2 oranges |
Instructions
Preheat oven to 200°C.Scones:
Sift together flour, baking powder, salt and sugar and mix thoroughly. Add butter and blend until mixture resembles crumbs.
In another bowl, mix cream and egg together, and then combine with the flour mixture.
Roll blueberries in some flour to coat and fold the blueberries into batter.
Drop large tablespoons of batter on an ungreased cookie sheet and bake for 15-20 minutes until brown. Cool before applying orange glaze.
Orange glaze:
Combine butter, sugar, orange zest and juice in a pot over simmering water or in the top part of a double boiler.
Cook and stir until butter and sugar are melted and mixture has thickened.
Remove from heat and beat with an electric mixer until smooth and slightly cool. Drizzle or brush on top of scones.
