Orange cardamom scones recipe details
- Ingredients
- 3 cups all-purpose flour
- 1/3 cup sugar
- 2-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 3/4 cup cold butter, cut into small pieces
- 3/4 cup chopped dry fruit or nuts (optional)
- 1 orange, zested and juiced
- 1 cup orange juice
- 1/2 teaspoon cardamom
Preheat oven to 400 degrees. Squeeze the orange into a measuring cup and add orange juice to equal 1 cup for liquid. In a large bowl, stir together flour, sugar, baking powder, baking soda, and salt until thoroughly blended. Using a pastry blander, cut the batter into the flour mixture until it resembles a coarse meal. Stir in the fruit or nuts or a combination of both. Cranberry is excellent with this combination. Make a well in the center of the butter flour mixture and add the juice all at once. Stir the mixture until the dough pulls away from the sides of the bowl.
With your hands, gather the dough into a ball and turn out onto a lightly floured board. Divide the dough into flour parts and lightly pat each part into a circle. Cut each circle into four parts and place the wedges on a buttered cookie sheet. Sprinkle the scones with a cinnamon-sugar mixture if desired. Bake at 400 for 12 minutes.
