Orange butternut sauce recipe details
Ingredients
¼ tsp | olive oil |
2 clove(s) | garlic, minced |
700 ml | vegetable broth |
1 kg | butternut squash |
1 sprig(s) | rosemary |
200 g | sweet corn |
2 tbsp | cornstarch |
60 ml | orange juice |
¼ tsp | cumin |
60 ml | yogurt or crème fraîche |
salt and pepper, to taste |
Instructions
Preheat oven to 180°C.Place butternut squash in a baking tray and bake for 50 minutes. Remove from oven and cut into chunks.
Sauté the garlic in oil for 3 minutes. Stir in the stock, squash and rosemary and simmer for 15 minutes. Remove the rosemary sprig and discard.
Combine cornstarch and orange juice and whisk until dissolved.
Season with salt and pepper, stir in the corn, cumin, and cornstarch mixture and cook for 3 minutes. Pour into a blender and puree until smooth.
Before serving, whisk in the yogurt or crème fraîche, toss with pasta and serve.
