Ingredients
5 medium | eggs |
140 g | sugar |
60 ml | oil |
80 ml | orange juice |
1 tsp | orange rind, grated |
100 g | matzo meal |
50 g | potato starch |
1 tsp | salt |
110 g | orange marmelade, melted |
Instructions
Separate the egg whites from the egg yolks. Beat yolks and 90g sugar until light. Beat in oil, juice and rind. Sift matzo meal, starch and salt and blend into yolk mixture.
Beat whites until foamy, gradually add rest of sugar and beat till stiff peaks form. Fold yolk mixture into whites. Pour into ungreased 9inch (22cm) tube pan.
Bake 50-60 minutes at 325°F/160°C. Invert until cool. Spoon marmalade over the top.
