Matjes fillet with celery and green bean salad recipe details
Ingredients
For the Salad: | |
1 stalk(s) | celery |
1 | red onion |
150 g | haricot vert |
salt and pepper | |
1 tbsp | red wine vinegar |
100 ml | vegetable stock |
½ tsp | mustard |
3 tbsp | olive oil |
1 tsp | marjoram or savory, chopped |

For the fish: | |
150 g | sour cream |
100 g | crème fraîche |
1 tsp | mustard |
1 tbsp | lemon juice |
1 pinch(es) | cayenne pepper |
1 pinch(es) | sugar |
8 | fillets of matjes, (pickled herrings) |
Instructions
Mix the sour cream with Crème fraîche and mustard. Season with lemon juice, pepper and sugar. Rinse the herring fillets with water and pat dry. Cut into 2cm stripes and gently fold in the cream mixture. Allow to marinate for at least 2 hours. Check seasoning before serving.Cut the celery and the onion in thin slices. Blanch the beans in well salted water for 8 minutes. Plunge into ice-cold water then drain in a sieve. Transfer all vegetables into a salad bowl.
Mix vinegar, vegetable stock, mustard and oil. Season with salt, marjoram or savoury and pepper. Pour the dressing over the salad vegetables and toss. Season to taste with salt and sugar.
Serve the fillets of matjes with the salad.
