Omelette with Asparagus and Cheese recipe

|750 g||asparagus, woody ends removed|
|some||salt and pepper|
|4 tbsp||single cream|
|1 bunch(es)||chives, chopped|
|120 g||grated cheese (Cheddar or Gouda)|
Cook the asparagus in salted water until al dente. Drain and slice.
Beat the eggs in a bowl. Stir in the cream and the chives. Season with salt and pepper.
Melt ½ tablespoon of butter in a pan. Ladle ¼ of the egg mixture, the asparagus and the cheese into the hot butter and bake the omelette until set and golden. Serve immediately. Repeat with the remaining ingredients.
