Ingredients
1 cup whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cardamom (optional)
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
3/4 cup quick cooking oats
1/4 cup canola oil
1/4 cup honey
1 egg
1 teaspoon vanilla
1 cup apples (peeled, cored, and finely chopped)
1/4 cup dates (pitted and chopped)
1/2 cup nuts (chopped fine)
Instructions:

Combine flour, baking soda, salt, cardamom, nutmeg, cinnamon, and oats in a bowl. In a separate bowl, cream together oil and honey. Add egg and vanilla; beat well. Gradually add dry ingredients to egg mixture, beating well. Fold in apples, dates, and nuts.

Coat a cookie sheet with non-stick cooking spray. Drop batter by spoonfuls onto sheet and bake in a 350-degree oven for 12 to 14 minutes or until nicely browned. Cool on racks.
