Ogunquit eggs with pineapple recipe details
- Ingredients
- Butter (not margarine)
- 3/4 cup sour cream or plain yogurt
- 24 to 30 slices bacon, crisped and drained
- 12 eggs
- Dill weed
- 12 pineapple rings
Butter a 12-cup muffin pan. Place 2-1/2 pieces bacon in bottom of each muffin cup. Place 1 teaspoon sour cream or yogurt over bacon. Break 1 egg over sour cream or yogurt in each cup and sprinkle dill weed over eggs. Bake for 10 to 15 minutes in 350-degree oven.
Heat pineapple in microwave. Place egg mixture over hot pineapple ring.
Variation: You may also use chili sauce instead of sour cream or yogurt.
