Oats and curd cheese fritters with strawberry and rhubarb compote recipe details
Ingredients
2 | eggs, separated |
50 g | sugar |
200 g | curd cheese |
50 g | oats |
2 tbsp | flour, heaped |
1 tsp | grated lemon peel |
½ | lemon, juiced |
salt | |
3 tbsp | oil |
1 tbsp | icing sugar |
For the compote: | |
250 g | strawberries |
500 g | rhubarb |
3 tbsp | sugar |
1 packet(s) | custard powder, vanilla flavoured |
Instructions
Whisk the egg whites until stiff. Mix thoroughly the egg yolks with the sugar, curd cheese, oats and flour until creamy. Stir in the lemon juice, lemon rind and a pinch of salt. Fold in the beaten egg white. Allow the batter to rest for 10 minutes.Halve the strawberries and cut the rhubarb in bite-sized pieces. Place the fruits in a saucepan, add 250 ml water and bring to the boil. Simmer over low heat for 4 minutes. Add the sugar. Mix the custard powder with tablespoons of water. Stir the mixture into the compote and bring to a short boil, while stirring constantly. Transfer the compote into a bowl and allow to cool completely.
Heat oil in a skillet. With a tablespoon put always a blob of batter in the hot oil. Fry the oat fritters from both sides until slightly brown.
Arrange the fritters on a preheated platter, dust with icing sugar and serve with the compote.
