Oatmeal creme brulee recipe details
- Ingredients:
- 3 large egg yolks
- 1/4 cup brown sugar
- 3/4 cup half & half
- 3-1/2 cups water
- 2 cups old-fashioned oats
- 1/4 cup brown sugar
- 2 Tablespoons shredded coconut
What a great variation on the traditional oatmeal! This dish is based on traditional stove cooked oatmeal, but is topped with a cream sauce, brown sugar, and coconut. The dish is then broiled like the traditional creme brulee to provide a slightly burnt sugar topping. Delicious!
Beat egg yolks and 1/4 cup brown sugar in heat-proof bowl until pale and thick. Place over saucepan of boiling water and whisk until pale and very thick, about 4 to 5 minutes. Cool. (This mixture can be made up to 24 hours ahead, then stored in refrigerator.) Fold in heavy cream. Set mixture aside.
Combine water and oats in medium saucepan. Bring to boil, then reduce heat to medium and cook, stirring occasionally, until thick, about 5 minutes. Stir in half of the yolk mix. Fill 6-ounce ramekins with oatmeal until about 2/3 full. Top each oatmeal dish with 1 to 2 Tablespoons of cream mixture. Sprinkle each dish with remaining brown sugar and coconut. Broil about 3 inches from heat source for 1 to 2 minutes until golden brown.
