Oatmeal butterscotch squares recipe details
- Ingredients:
- 1 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup butter, softened
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 3 cups regular oatmeal, uncooked
- 12 ounces butterscotch chips
This is a very popular cookie with butterscotch lovers.This recipe is from The Queen Victoria Inn Cookbookby Doug and Anna Marie McMain.
Preheat oven to 375 degrees. Spray a 10 x 15-inch rimmed cookie sheet with non-stick spray. Combine flour, soda, salt, and cinnamon. Set aside. Cream butter, then add sugar and mix until fluffy. Add eggs, then vanilla and beat well. Gradually add flour mixture. Stir in oatmeal and butterscotch chips. Spread in prepared pan and bake at 325 degrees for 20 to 25 minutes. Cool and cut into squares.
