Ingredients
350 g | cold butter, cut in flakes |
200 g | sugar |
400 g | soft sugar |
225 g | ground hazelnuts |
680 g | flour |
1 tsp | salt |
1 tsp | baking powder |
1 tsp | cinnamon |
3 | eggs |

Instructions
Place butter, sugar, soft sugar, nuts, salt, baking powder and cinnamon into a bowl and in turn and by and by stir in flour and eggs. Knead until well combined.Divide the pastry into 5 parts, shape the parts to rolls with a diameter of 3.5cm. Wrap with baking paper and keep the rolls in the fridge in a freezer bag until required.
Preheat the oven to 180°C.
Cut the rolls into thin slices and transfer the slices onto a greased baking tray. Bake for 8-10 minutes until golden brown.
Melt the couverture, fill into a piping bag and garnish the biscuits with the chocolate.
Note:
The pastry can be kept for up to two weeks in the fridge.
