Ingredients
90 ml | honey |
90 g | sugar |
3 medium | eggs, whites only |
450 g | almonds, chopped |
170 g | hazelnuts, shelled, lightly toasted |
40 g | pistachio nuts |
6 tbsp | water |

Instructions
Cook the honey in a double boiler for about 1-1/2 hours, stirring constantly.Combine the the sugar and water and cook until it reaches the hard-ball stage.
Whip the egg whites until stiff peaks form and fold into the honey. When the mixture is foamy, add the cooked sugar and continue mixing until the mixture begins to harden. Add the almonds, hazelnuts, pistachio nuts, mixing thoroughly.
Line a mold or a rectangular baking pan, with the thin sheets of unleavened wafer.
Pour in the nougat mixture making an even layer. Top with another wafer, cover with a wooden board, and weight the board down. Let stand for an hour.
Turn the baking pan over onto a board and break the torrone into pieces as large as desired. Wrap in aluminum foil to keep for a longer period and store at room temperature.
