Norwegian raisin buns recipe details
Ingredients
200 g | raisins |
100 ml | port, sherry or orange juice |
1 kg | plain flour |
150 g | sugar |
3 tsp | salt |
3 tsp | ground cardamom |
800 ml | milk |
1 ½ tbsp | dried active yeast |
1 medium | egg, beaten |
150 g | butter, softened |
1 medium | egg, whisked, as glaze |
Instructions
Makes approximately 24 buns.Soak the raisins in the fortified wine or juice for several hours, overnight if possible. Stir a few times at intervals to ensure that everything is coated and some of the liquid absorbed. Drain and discard surplus liquid immediately before use.
In a large bowl, mix flour, sugar, cardamom, raisins and salt. A stand mixer may be used, if required.
Warm the milk in a pan to lukewarm. Remove from heat and add the yeast. Stir and add to the flour mixture and mix together with a wooden spoon, if not using a mixer. Add the egg and butter. Blend together for a few minutes until an elastic dough is formed. It should be slightly sticky, but not excessively so. Add a little more flour if required. Form into ball and allow to rise, covered with cling film, for about an hour.
Preheat oven to Gas Mark 6, 200°C, 400°F.
Turn out dough onto a lightly floured surface and divide into 24 pieces (divide in half, then each in half again – twice, and finally each into 3), or more if you want smaller buns. Form dough pieces into slightly flattened balls between your hands. Place the shaped pieces on a greased baking tray or a baking tray lined with parchment and allow to rise for about 30 minutes.
Glaze the buns with the remaining egg and bake for 15-20 minutes (smaller ones will require slightly less, probably 12-15), until golden brown. Allow buns to completely cool on a wire rack before serving.
