Northhamptonshire cheese tartlets recipe details
Ingredients
230 g | shortcrust pastry |
170 g | cream cheese |
4 tbsp | butter |
2 | eggs |
3 tbsp | caster sugar, heaped |
100 g | currants |
1 | lemon, grated peel |
3 drop(s) | almond essence |
1 pinch(es) | freshly grated nutmeg |
Instructions
On a slightly floured surface, roll out the pastry and cut out to line 12 greased patty tins.Preheat the oven to 180°C.
Whisk the cream cheese until smooth.
In a saucepan, melt the butter and whisk in the eggs and the sugar over low heat. Stir constantly until thickened, but do not allow to boil. Remove the saucepan from the heat and stir in the cream cheese. Add the currants, lemon rind and almond essence. Mix well, then spoon the mixture into the tins.
Sprinkle a small pinch of nutmeg on top of each. Bake for 20-25 minutes until golden and well risen.
Serve hot or cold.
