New Jersey’s Best Blueberry Muffins recipe

This recipe is from a New Jersey blueberry grower. These muffins are biscuit-like…not too sweet.
- Ingredients
- 2 eggs, beaten
- 1 cup milk
- 1/2 cup corn oil
- 3 scant cups flour
- 1 cup sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1-1/2 cups fresh or frozen blueberries
Instructions:
Mix eggs, milk, and oil together. In another bowl, sift all dry ingredients together. Combine gently until mixed (lumps are OK). Fold in blueberries. Fill greased muffin cups 2/3 full. Bake at 400 degrees for 15 to 20 minutes or until done.
