New england corn muffins recipe details
- Ingredients
- 1 cup cornmeal
- 1 cup flour
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 cup milk
- 2 eggs
- 1 teaspoon maple extract
- 1/2 cup maple syrup
- 1/2 cup oil or melted butter
Add the maple extract to the milk and blend. Whisk the eggs and brown sugar together; then whisk in the syrup. Add the milk mixture and blend. Sift and mix all dry ingredients, then add to the wet mix. Bake at 375 degrees for 20 minutes.
Note: You can double this recipe, just add additional teaspoon of maple extract. Serve warm (it will enhance the maple flavor).
