- Ingredients
- 1-1/2 cups croutons
- 2 cups grated cheddar cheese
- 1-1/2 pounds sausage
- 4 eggs
- 2-1/4 cups milk
- 3/4 teaspoon dry mustard
- Topping:
- 1 can cream of mushroom soup
- 1/2 cup milk
This dish was the first thing Charley’s Mama made for me when I visited her home in San Antonio. I remember that we were in a hurry to go somewhere and Nana had put it in the oven as we were getting ready to walk out the door. Place croutons on bottom of buttered 9 x 13-inch casserole. Top with most of cheese. Brown sausage, drain and rinse with hot water. Put on top of cheese. Beat eggs with milk and dry mustard and pour over cheese mixture. Put remainder of cheese on top. Cover with plastic wrap and refrigerate overnight.
Next Morning:Mix soup with 1/2 cup milk and spread over top of casserole. Bake at 300 for 1-1/2 hours. Serve with picante sauce on the side.
