Mutsu apple tarte tatin with cider sabayon details
Ingredients 1 sheet puff pastry, thawed 4 to 6 mutsu apples, peeled and quartered 3/4 cup butter 1-1/2 Tablespoons dark brown sugar 1/2 Tablespoon cinnamon Splash of Calvados or Brandy Cider Sabayon 4 egg yolks 1/4 cup sugar 1/4 cup cider 1/4 cup lemon 1 Tablespoon brandy 2 Tablespoons (35%) creamRoll pastry and cut into a disc the width of a 10-inch pie plate. Chill. Heat butter, sugar, and cinnamon over medium heat until even consistency; add brandy. Pour into bottom of pie plate. Arrange apples nicely over sugar. Place puff pastry atop apples. Bake at 375 degrees for 25 to 30 minutes. To serve, invert onto a plate to slice.
Cider Sabayon: Whisk ingredients over water. Bath to ribbon (6 to 7 minutes). Remove from heat. Whisk in cream.
