Mustard eggs recipe details
Ingredients
6 | eggs |
2 medium | onions, finely chopped |
80 g | butter |
80 g | bacon, finely chopped |
4 tbsp | flour |
500 ml | vegetable stock |
500 ml | milk |
4 tbsp | Dijon mustard |
nutmeg, freshly ground | |
salt and pepper, to taste | |
6 | potatoes |
Instructions
Boil eggs to medium or hard.In a casserole dish heat the butter. When the butter has melted add the onions and the bacon and fry for 1 minute, then slowly add the flour. Stir into a thick paste, add the mustard and cook for a couple of minutes. Gradually add the stock and the milk whilst stirring constantly with a small balloon whisk to break down any lumps until the roux has thickened. Add nutmeg, salt and pepper.
Place boiled potatoes and peeled eggs onto plates and pour over the sauce.
