Mushroom pesto recipe details
Ingredients
300 g | mushrooms |
4 tbsp | extra virgin olive oil |
1 tbsp | Worcestershire sauce |
1 tbsp | dry sherry |
30 g | pine nuts |
60 g | Parmesan cheese, grated |
20 g | parsley |
1 clove(s) | garlic |
¼ tsp | salt and freshly ground pepper, to taste |
Instructions
Heat one tablespoon olive oil over high heat in a non-stick skillet and sauté mushrooms with Worcestershire sauce and Sherry. Season with salt and pepper and keep stirring until mushrooms begin to brown.In a blender combine mushroom mixture with garlic, nuts, Parmesan cheese and remaining olive oil. Process until smooth.
