Mushroom and leek pastries recipe details
Ingredients
250 g | mushrooms, sliced |
1 stalk(s) | leek, sliced |
1 | onion, chopped |
1 tbsp | oil |
salt and freshly ground black pepper | |
nutmeg | |
100 g | ricotta cheese |
100 g | goat’s cream cheese |
4 medium | eggs |
100 ml | milk |
1 pack(s) | ready rolled out puff pastry |

Instructions
In a large pan, heat the oil. Add the onions, the leek and the mushrooms and stir-fry for 4-5 minutes. Season to taste with salt, pepper and nutmeg. Allow to cool.Preheat the oven to 180°C.
Beat the eggs into a bowl add the Ricotta, goat’s cheese and the milk and stir until smooth and well combined. Season to taste with salt and pepper.
Cut the puff pastry into 4 pieces the size to fit into 4 buttered pie tins. Line the pie tins with the pastry.
Divide the vegetables on the pastry. Cover with the Ricotta mixture. Bake for approximately 30 minutes until golden brown and crispy.
