Multi grain buttermilk pancakes with homemade syrup recipe details
- Ingredients – Pancakes
- 3/4 uncooked Quakermulti-grain cereal
- 1-3/4 cups buttermilk, divided use
- 1 egg
- 2 Tablespoons vegetable oil
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 3/4 to 1 cup self-rising flour
- Ingredients – Syrup
- 1/4 cup white corn syrup
- 1/4 cup good-quality honey
- 1 cup white sugar
- 1 cup brown sugar
- 3/4 cup water
- 1 teaspoon vanilla or maple flavoring
Pancakes: Combine the cereal with 3/4 cup buttermilk. Set aside for several minutes. Beat egg in bowl. Add oil, baking soda, baking powder, and mix. Add flour and remaining buttermilk. Finally, add the cereal. Stir. Make a sample. It my be necessary to add a bit more flour or buttermilk.
Syrup: Mix in saucepan corn syrup and honey. Add sugars and water. Bring to a boil and simmer for about 5 minutes. Cool and add vanilla or maple flavoring. Serve warm. If syrup is too thick, add a small amount of hot water to thin slightly.
Makes: 15 medium pancakes
