- Ingredients
- 4 eggs, separated
- 1/2 cups milk/light cream
- 3/4 cup cottage cheese
- 2 Tablespoons chopped parsley
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 Tablespoon butter
Instructions:
Beat egg yolks until smooth with milk, cottage cheese, parsley, and salt and pepper. Beat egg whites until stiff. Fold gently into egg yolk mixture. Melt butter in iron skillet until hot. Pour the omelet into the skillet and cook over low heat until the bottom is set and edges begin to brown. Finish cooking in a 375-degree oven for 15 to 20 minutes until top is high and brown. Serve with salsa and garnish with green onion tops, snipped.
