Mom's fabulous florentine eggs with cheese recipe details
- Ingredients
- 8 eggs, slightly beaten
- 8 ounces shredded Swiss cheese
- 8 ounces feta cheese, crumbled
- 1 cup cottage cheese
- 1/4 cup melted butter
- 1 package of frozen chopped spinach, thawed and squeezed dry
- 1 teaspoon ground nutmeg
- Cheese Sauce:
- 2 Tablespoon butter
- 3 Tablespoons flour
- 1 cup half & half
- 8 ounces grated Monterey Jack Cheese
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- dash of Tabascopepper sauce
This has been a family favorite at Christmas and special family events for years. It is always great to use it here for guests.
Preheat oven to 350 degrees.
Combine eggs, cheese and the butter in large bowl. Mix well. Stir in the spinach and the nutmeg. Divide into 8 greased ramekins and bake for 30 minutes.
While baking the eggs, make the cheese sauce. In sauce pan melt the butter, stir in the flour and cook stirring until creamy 1 to 2 minutes, Add the milk and cook stirring constantly until the sauce begins to thicken and boil. Stir in the cheese and seasonings and continue cooking until the cheese has melted.
To serve:Remove eggs from ramekin, spoon two to three large spoonfuls of cheese sauce over the eggs. Serve quickly before they cool.
