Mixed fruit tray bake recipe details
Ingredients
250 g | unsalted butter |
300 g | golden caster sugar |
1 tsp | vanilla extract |
3 large | eggs |
200 g | self raising flour |
50 g | ground almonds |
2 medium | apples, peeled, cored and sliced |
150 g | mixed berry fruits (raspberries, blackberries, etc) |
50 g | flaked almonds |
1 tbsp | icing sugar |
¼ tsp | salt |
Instructions
Butter and line a traybake tin with baking parchment, about 20 x 30cm. Heat oven to 180°C/160°C fan/gas 4. Gently melt the butter in a large saucepan, allow to cool for 5 minutes, then add the sugar, vanilla and eggs, then beat until smooth. Stir in the flour, ground almonds and ¼ teaspoon salt.Tip the mix into the tin, and spread evenly over the base. Place the apple slices evenly on the top. Scatter the mixed berries and almond flakes over the apple, then bake for 1 hour-1 hour 10 minutes, covering with foil after 40 minutes. Test with a skewer: the middle should still be slightly moist, which will firm up once the traybake cools.
Cool in the tin for 20 minutes, then lift out onto a cooling rack. Once cold, dredge with icing sugar, then cut into squares.
Variation:
Peaches and raspberries, apricot and almond, mixed fruit with glace cherries and mixed peel. Let your imagination run riot!
