Ingredients

4	artichoke hearts, drained and quartered
4 stalks	white asparagus, peeled
4 stalks	green asparagus, woody ends removed
8	olives, green and black
4 slice(s)	white bread, toasted
	For the vinaigrette:
½	red bell pepper, chopped
½	yellow bell pepper, chopped
1 tbsp	vinegar
4 tbsp	olive oil
	salt and pepper

Instructions

Cook the white asparagus in salted water for 12-14 minutes. Cook the green asparagus in salted water for 5-8 minutes. Drain and allow to cool. Cut all in bite-sized pieces.

Spike in turn the white and green asparagus pieces, olives and artichokes on skewers.

Mix together the vinaigrette ingredients and season to taste with salt and pepper. Pour the vinaigrette over the skewers. Serve with the toasted bread.
