Mixed antipasti skewers with a tasty vinaigrette recipe details
Ingredients
4 | artichoke hearts, drained and quartered |
4 stalks | white asparagus, peeled |
4 stalks | green asparagus, woody ends removed |
8 | olives, green and black |
4 slice(s) | white bread, toasted |
For the vinaigrette: | |
½ | red bell pepper, chopped |
½ | yellow bell pepper, chopped |
1 tbsp | vinegar |
4 tbsp | olive oil |
salt and pepper |
Instructions
Cook the white asparagus in salted water for 12-14 minutes. Cook the green asparagus in salted water for 5-8 minutes. Drain and allow to cool. Cut all in bite-sized pieces.Spike in turn the white and green asparagus pieces, olives and artichokes on skewers.
Mix together the vinaigrette ingredients and season to taste with salt and pepper. Pour the vinaigrette over the skewers. Serve with the toasted bread.
